Yes, I know that all those tofu-based vegan ice cream recipes say to use the refrigerated, water-packed silken tofu, but after I had a couple packs of that expire in my fridge (I guess I didn't make enough ice cream that month) I just tried using this instead (from my unlimited supply in the pantry) and it came out fine. If you want tofu slabs or stir fry chunks, go for extra-firm water-packed refrigerated tofu, pressed for best effect."
