"If you are using a yogurt maker 5-6 hours of incubation should be adequate (for those starting from this culture) if you do not have a yogurt maker then cover it with blankets ( a few sets) or various cloths to keep the internal heat (traditional technique I had used for many years before buying a yogurt maker) This time the incubation time depends on the external temperature, how you cover it and the volume of your milk. But around the same time should be fine. Traditionally people in my home country use pre-made yogurt as a starter culture and they even borrow culture from neighbors when they need to change it. A store bought yogurt could be a replacement for using a starter culture sachet like this one but in the long run, this comes cheaper than buying yogurt from the grocery every once in a while and is more convenient since it can be stored for a long time at a cool-dry place with no need for refrigeration. For example, using yogurt maker, I incubate the yogurt made from a previous yogurt for 4 hours to get the desired thickness. I hope this tips help the other home yogurt makers save some money, remember: yogurt has been made for thousands of years and using starter culture is only a thing of the last few decades..."

"I've been brewing on and off for five years and have experimented with tons of different sugars, water types, minerals, fruits, etc etc. I've had them less than a week and they have already outperformed every other batch of water kefir grains I've purchased in the past (from other sellers). I have such an over abundance of kefir grains that I've been giving them away to neighbors and even feeding them to my dog (yes its safe to do that and its good for your four-legged friends too). The quick transit time probably was a big factor in why these grains arrived in such great shape and went right to work. First of all, it's not a balloon like the kind you blow up at parties, it looks more like a black sausage casing tied off at both ends, that's the best way i can describe it. So embrace the water kefir balloon packaging people and stop leaving this seller negative reviews because ot it!! In addition to the balloon, the grains are further protected from harm during transit because the seller then puts the balloon in a plastic food storage container and then puts the storage container in two thick zip baggies, further ensuring that no explosion takes place. Without writing an entire novel about it, let me just say that I should have listened to the warnings made by people on the interwebs about the awful performance and inevitable death of water kefir grains that have previously been dehydrated. Obviously storing live water kefir grains in an Amazon warehouse is impossible, so this seller did the next best thing by offering free FAST shipping. I will agree with one negative point a reviewer made: This seller's PDF of water kefir info is God-awful in terms of spelling, grammar, and organization of information."
"As the neighbor didn't get home until late, and they didn't know what was IN the package, the grains sat on their counter until the morning of the 23rd. I can't see how this package could burst or leak, unless someone deliberately threw it on the ground and/or stomped on it. I poured everything into a quart jar, DID NOT RINSE, filled with water from my Berkey, added in 1/4th cup of raw, organic cane sugar and about 1T of molasses. The molasses fed them well, and the kefir was drinkable however, I tossed it and started a fresh batch. My second batch, I made a quart with all the grains, 2T raw cane sugar and 1t of molasses instead of 1T. One last quart, 2nd fermented with apple pieces and 1T extra raw cane sugar, which was done specifically for my 6 y/o, just went into the fridge today. As shown in my photo, taken last night ( 10 March 2016), I am currently the proud owner of over 2 CUPS of plump, chunky kefir grains! As stated by another poster, when your little guys stop kicking and, trust me, you WILL know, put them in fresh water with a bit of baking soda. Do a double solution, cap and let them REST in the fridge for a week or two, to give them time to *sleep*."
