Iron retains heat and gets hotter than other types of pans, which causes burning and sticking. "As an amateur cook, I like to avail myself of quality cookware for good results and tasty food. Over the years I have collected a few "Le Creuset" pots of various sizes, from Cocottes to 5 Qt., and they have weathered the test of time and frequent use. Recently, I needed an oval shaped Dutch oven for fish recipes and discovered the Cuisinart enameled cast iron 5 ½-Qt. oval casserole (Dutch Oven) at a price less than ⅓ of a similar "Le Creuset". Easy to clean with dish soap and warm water (Recommended) - no matter the residual. I recommend "seasoning" the exposed cast iron on the rim of the cover and the pot itself - rub the edges with oil and put it in a 350 degree oven for about an hour and let it cool off before using it."

The color porcelain enamel on cast iron can be used on gas, electric, ceramic and induction cooktops, as well as in the oven. Two layers of very hard, glossy porcelain enamel are chip resistant and easy to clean.
