Best Carving Knives

Victorinox 12 Inch Fibrox Pro Slicing Knife with Granton Blade
“Highly Recommended" by a leading gourmet consumer magazine that features unbiased ratings and reviews of cookware and kitchen equipment, this Slicer is preferred due to its comfortable handle, superior weight and balance, and its ability to precisely slice through meats in one single stroke . Tested against dozens of other slicing knives, some with price tags nearly 3 times the cost of this knife, the 12" Fibrox Pro Slicer is best in class. Optimally weighted with high-quality, lightweight European steel that reduces hand and wrist fatigue, the 12" Fibrox Pro Slicer is comfortable even after extended use. Depending on what is being cut, these grooves will fill with juices or create pockets of air, which decrease friction and prevent food from sticking to the blade. Whether a seasoned, or novice home chef, Victorinox Swiss Army offers not only the right tools and the know-how, but most importantly, the confidence to achieve one’s culinary aspirations. Today, Victorinox Swiss Army still sells a handful of accessories, including the High Heat Turner line, under the Forschner name. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable" and used in the production of his cutlery, Karl changed the name of the company to Victorinox. Long and narrow in shape, with a razor sharp edge designed for maximum cutting performance, this knife is suited for slicing everything from meats, to cakes, to sandwiches.

Reviews
"I cant believe that some people are complaining about this knife rusting, its carbon steel it will rust if you do not take care of it which basically just means oiling it once in a while."
"Since the one I got had the carbon steel blade, I put a forced patina on it by letting it sit in hot (almost boiling) apple vinegar. I wrapped the sheath in paracord and waxed the blade. The same model, but this time I got it with a blaze orange handle and sheath and a stainless steel blade (obviously no need for a forced patina with stainless steel)."
"The blade thickness makes it rugged and stiff enough to get through many things I slice open; heavy duty cardboard boxes, heavy fabric, and ropes. I put them in my tool kits, shop, fishing boxes, and bug out bags."
"Obviously one of these blades isn't as strong as a properly forged blade (they are cut out of sheet stock), but they are made the same way as most mass produced knives and they start with better steel than most brands."
"The hard plastic sheath isn't much to look at, but it holds the knife securely, even with my preferred upside-down neck lanyard carry. (I drilled a small hole in the tip of the sheath and ran para through it). I wouldn't regularly baton with this knife, as the blade is a bit thinner. For skinning, carving, processing kindling, all my cordage work, it's an absolute joy to carry and use. While the blade is carbon steel, holding and taking that excellent edge, it WILL NOT strike a spark off ferro."
"I wasn't expecting much from this knife, in fact I thought it would be very thin metal, but was surprised at how good of quality the blade is."

Reviews
"Food-grade plastic is approved by the FDA, which matters to me."
"So, if he said I should have the claws so I bought them."
"My only complaint is i wish they were metal."
"I wasn't sure if these were just a gimmick when I bought them as a lightening deal."
"These are GREAT!"
"I finished pulling the pork in half the time I had allotted."
"Before I totally procrastinated making pulled pork, because I couldn't easily pull all the meat apart."
"They're shipped loosely in a small cardboard box- and when I opened the box, I noticed some of the ends of the claws had been slightly broken- but still attached by a sliver of plastic. 3)After shredding nothing more than chicken breasts in a stainless steel pot- I noticed the ends of the claws had some flat spots, as if they had been rubbed off/broken off during the shredding process. Possibly from the mixture of heat and the fact that they were striking against a stainless steel pot?"
