"No one likes having his or her food come out burnt on the outside and undercooked on the inside, or one side being more cooked than the other due to burner `hot spotting'. Good quality cookware with a more even heating transfer is one of the easiest ways to avoid this. $1,000 on a set of standard All-Clads, a few niche pots for your favorite food types with a steamer, and a nice cutlery set (Shun or Mosimoto, for example) is something that will last decades where as spending $10 a day on lunch doesn't last long at all, but it sure adds up fast. The durability of these over the models costing ¼ to ½ the price is also pretty substantial. And if you move to a place with a different stove, you can take comfort in knowing that All-Clad cookware excels with gas, electric, induction, side-heat, and open pit cooking. Exotic cookware such as enameled iron, carbon steel, carbon fiber, ceramic, and organic materials all have some positives, but weaknesses at the points of either costs, durability, heat conductivity, upkeep, or a combination of the above...and these issues are enough to exclude these from fitting the needs of most people. Stainless on the outside, aluminum on the inside (and with All-Clad's higher end models, add copper and multiple cores). Also, many people note that the rivets on the handle of All-Clad makes cleaning in the area somewhat difficult...and I agree. The rivets are massive and as soon as you pick up a pot and run your finger over them, you will see they are heavy duty. The little extra cleaning effort is worth this level of durability as those rivets will give decades of great usage. A 30 second clean with Bar Keeper's Friend will make them looking consistently good with minimal effort. If they show a few scratches, who cares?...it's a device used to make food, not an art museum display. I don't like these, and if you spend a lot on cookware, I would advise NOT buying anything that is labeled as non-stick and a coating is what is used to give non-stick properties. If you are thinking about clad, get the stainless surfaces as it will be easier to maintain, last longer, and can withstand incredible abuse. Also, cooking practice makes it easier to reduce sticking with stainless cookware...for example, something like olive oil and slightly lower heat does wonders."

I tried it on medium low heat and it had so little heat that I could touch the sides of the pan and it wast even warm to the touch. I finally decided to use it on high heat, which is how stir-fry is supposed to be cooked at and everything worked great. Whatever leftover food stains on the wok can be worked out with some soaking and Bar Keepers Friend. "Here are the steps I took to season and clean my skillet: Seasoning the skillet: I placed foil on the bottom of the oven and preheat to 400 degrees. I fried some bacon in the skillet and lid and as I suspected the meat stuck to the bottom. Cleaning the skillet: It is easier to clean the skillet when it is still a bit warm, but please use caution. Using Morton’s sea salt and a paper towel I began to scrub the skillet (you can also use a raw potato and sea salt). Once clean I rinsed out the skillet and immediately put it on low heat for about 2 minutes to evaporate any water. Store in a cool, dry place to prevent rusting. A couple of notes: NEVER submerge a cast iron skillet in water as it will cause rust). NEVER use soap. NEVER put a cast iron skillet in the dishwasher. If you do have rust – use steel wool to scour and remove the rust."

"If there is a ‘workhorse’ of the various All-Clad cookware products I own (out of about 15 different pots/pans), it is their 3Qt Saute pan, by far. If cooking for more than 4, the 4 Qt Saute pan gives some advantages (which I also own, but use only a fraction of how often I use this 3.). ==USES==. I use a saute pan for conventional and not-so-conventional usage. It is my primary fry pan...the lid keeps grease splash less than that of an open top fry pan, and the sides and lid allow the usage of radiating heat which unlike a normal fry pan, can be used to cook meats that you want to get a higher internal temp without burning the outside. I had read some of the other reviews for this pan and I do agree with one lady the coating on the pan is a little rough, but that goes back to pre seasoned cast iron its all that way. These are pans that your great grandchildren will treasure and these pans will make you a MUCH better cook IF you learn the difference between these and the others. because heat drying is the KEY to cast iron care.... do NOT put a damp pan in the cabinet it will rust and no your dish towel will not dry these pans well heat them up.... thats the only way to make sure your not putting your cast in the cabinet to rust. I can tell this will be an amazing pan because I pulled it out of the oven 30 min ago and it is still warm to the touch.... why is that good... it tells me that this pan will retain heat from stove to table so my family won't eat cold food after grace AND that the metal used is quality. (ps if you cook over the fire scrub the outside of the pan with soap when your ready to bring it to the stove again or your hands will forever be black from handling the pan!"
"Other ways it differs from the Teflon pan is that it takes longer to heat up, but once it is hot it does a better job at distributing and maintaining heat. Eggs, pancakes, french toast, grilled cheese, bacon, stir fry, salmon, literally everything I have thrown at it has been cooked faster and with more flavor than a normal pan. I can heat the griddle as hot as I like, unlike teflon cookware which can damage the nonstick properties. Lodge claims that the griddle is already pre-seasoned, but the first time I tried cooking some sunny side up eggs I ended up with a burnt crusty omelet that stuck to the pan. Thus, I began my Google search for the best method to season a cast iron pan. This basically means that the fat content in the flax oil breaks down readily at high heat and forms a tough film that gives cast-iron its non-stick properties. Again you want to make sure you do not go over 400 degrees because then the oil begins to smoke too quickly and the process of forming the hard coat is rushed. You may also want to open your windows and turn on the fan, the oil is essentially burning into smoke which may irritate your eyes and lungs. After an hour, turn off your stove and let the pan come to room temperature or cool enough to handle. Contrary to popular belief, a well-seasoned cast iron pan will NOT lose its coat with soap."

"I scrubbed it with hot water and coarse kosher salt, rinsed, then set on a burner and turned the burner on low, then gradually increased the heat until fully dry. While the pan is hot, I take a little bit of Crisco Shortening (about a tablespoon) and drop it in the pan, using a pasty brush I spread the melted shortening over the full interior surface, then I take a paper towel and wipe out any excess (but not too dry you want it to have a slight sheen to it), then I rub the outside of the pan, including the handle, sides and bottom. If you do have a sticking when the pan has cooled add hot water only, allow to soak for about 15 minutes or so and clean as usual."

"Using a looser grip allowing the front bottom of the holder to sit on your index finger and the rear top of the holder to press up against your palm provides a much better grip and control of the pan. This method even mostly negates the lubrication effect from modestly oily pan handles. And don't ask me why, but the multi-colored hot pepper design holder is a bit bigger and its interior just looks like the metalized cloth we've been using on the contact surface of cloth oven mitts for decades. ORIGINAL REVIEW: Okay, I will take for granted that if you're reading this you already have a Lodge cast iron pan(s). If you've used silicone in the past as a pot holder or oven mitt, you know that it is an excellent heat barrier and very very easy to clean and dries almost instantly. The problem with this holder is that it only comes in one size and is internally deeply ribbed (presumably to create an air channel and less contact for cooling efficiency). The 6.5" is so small that this holder allows the handle to just slosh around inside. Factor this in with the fact that oil/grease finds its way up cast iron handles and you have a real issue because of the internal ribs. In summary, this holder is fine for simply grabbing the pan and rotating it on the burner or for holding the pan as you stir its contents or for two-handed lifts using the helper handle (and hey, where's the helper handle holders???). For sauteeing or one-handed lifts (or even two-handed lifts by the main handle only), the poor grip (even lubricated SLIDING) of this holder really limits its usefulness as a handle holder. I've ordered the Lodge cloth-exteriored (but still internally silicone-lined) holders hoping for better grip. Hopefully there aren't any internal ribs on those holders or they'll get sent back prior to use."

"I decided to go with stainless steel because no matter how much it sticks, you can always get it out with Bar Keepers Friend, soaking or as a last resort; steel wool. Read all the reviews before getting it and noticed a lot say it does not heat up well enough, it sticks, it doesn't clean well, the lid is too heavy and the wok is too light, and to only use it on medium low heat to avoid burned or stuck food. I tried it on medium low heat and it had so little heat that I could touch the sides of the pan and it wast even warm to the touch. I finally decided to use it on high heat, which is how stir-fry is supposed to be cooked at and everything worked great. Whatever leftover food stains on the wok can be worked out with some soaking and Bar Keepers Friend. As for the wok being too light, that's generally how it should be as the method used during stir-fry is to lift the wok up with one hand and dish/scrape the food onto a place with the other. If there's still food stains, use Bar Keepers Friend. I'm happy with this purchase."
