Best results are achieved by combining two Alpine cheeses such as Swiss, Gruyere, or Fontina, and mixing with a little acidic liquid to break up the natural "Stringiness" such as a dry white wine or lemon Juice, and a thickener like flour or cornstarch. "It cleans up well, and the clever design of separating the pot from the heating element allows for a quick and easy change over of mean course if you are doing so and have 2 units (I plan to soon). Personally I think both these things are a small price to pay for the ability to swap out pots mid meal, and for making the parts you clean up separate from the electrical parts. The second thing is the hot plat is not smooth, instead it has many small circular grooves on it's surface, and as a result cleaning it is slightly more difficult than it would otherwise be if it was a smooth design in the event that something does land on it."
